Do you love Panera’s Broccoli Cheddar soup? Wanna make it at home and save money? Plus, you don’t even have to get out of your pajamas to have the flavor in your bowl in about 30 minutes.
Panera Copycat Broccoli Cheddar Soup- Creamy with little bits of broccoli and carrots while sharp cheddar adds a little tang. Sigh… oh trust me Panera, the kids and I love you but I can only get dressed, load the kids up, and head across town so many times. Let’s face it, you are pretty darn pricey too- I can make an entire pot of soup for a little more than the cost of 1 bowl at home…and I can stay in my

1 Tbsp. all purpose flour
1 Tbsp. butter
2 cups chicken broth (sometimes I do half broth and half beer for a twist)
2 cups whole milk
1 1/2 cups frozen or fresh broccoli florets
8 oz. bag of shredded sharp cheddar (or any other cheese you prefer)
1/4 tsp. Nutmeg
1/2 tsp. Garlic salt
Black pepper to taste
Place butter and flour in a large saucepan over medium heat and whisk frequently until it just starts to turn golden and has a nutty flavor.
Whisk in milk, broth, garlic salt, nutmeg, and pepper -reduce to a simmer for 15 minutes. Nutmeg may be a seemingly odd ingredient for soup but trust me on this one. I learned from Rachel Ray how yummy it is in small amounts when added to savory dishes like soups and I always put it in my mac n cheese recipe! It just adds a certain something to the flavor.
While liquid is simmering- peel and julienne 2-3 carrots ( cut like matchsticks) depending on how carrot-y you like your soup, rough chop broccoli.
After 15 minutes add broccoli and carrots, and simmer and additional 15-20 minutes until veggies are tender.
Once veggies are tender mix with an immersion blender to smooth it out, I like to leave a bit of texture in there.
Stir in cheddar until melted.
Serve with bread, or crackers. Or you could get really wild and throw it in a bread bowl. I am going to try my hand at them very soon.
