Our family loves pizza but rarely do we order out, preferring to have family pizza nights at home with a toppings bar and my homemade pesto sauce. It is amazing drizzled over warm pizza (and with a lot of other tasty recipes too). Recently we have begun a quest to get more healthier, having recently been diagnosed with some intestinal issues I started researching and found that even if you do not suffer from celiacs disease that many people have a hard time digesting gluten and have a sensitivity to it. So we have begun cutting many things from our diet including gluten. Freschetta Gluten Free Pizza is certified by the Celiac Support Association so the family and I can eat it without worry that there is hidden gluten. That means that it makes and easy and better choice for us for family pizza night- I set up a toppings bar and whip up some Homemade Pesto Sauce and we enjoy time around the dinner table. Grab an inexpensive divided platter at your local dollar store, it makes the perfect container for your toppings bar.
Fill it with items your family loves like- olives, fresh basil, onions, peppers, Parmesan cheese, mushrooms, and pesto drizzle (see recipe below.
Set out your favorite Freschetta Gluten Free Pizza like this Single Serve 4 Cheese Medley (perfect for my two little ones to split) or Freschetta’s Gluten Free Signature Pepperoni Pizza. Let everyone add their favorite toppings and bake. Providing kids with bright colored vegetables in a fun setting, and giving them some power of choice increases the odds that they will eat it.
Homemade Pesto Sauce
Now for a simple and tasty Homemade Pesto Sauce – Doesn’t it look delish?
1 cup fresh basil leaves
2 cloves garlic, peeled
2 Tbsp. Pine nuts
1/4 cup Parmesan cheese
1/3 cup olive oil
1/2 tsp. salt
1/2 tsp. pepper
Combine all ingredients in a blender or food processor and mix until well combined.
Store in a small jar with a tight fitting lid up to 5 days.
