So my fabulous hubby has been talking up his homemade pickled cauliflower for years, but hadn’t put his
money errr cauliflower where his mouth is,until recently. So I got ready to be wowed by his amazing kitchen skills, and then he pulled out a head of fresh cauliflower and…. an empty jar of pickles, with just the juice, seeds, and seasonings floating around. I really hate to call this a recipe but seriously this is an amazingly delicious way to gobble up your cauliflower. Even though technically he cheated….. I mean something this easy can’t be called a recipe can it? Nevertheless, you are gonna want to try these out.
So the next time you have leftover pickle juice when you finish a jar of your favorite pickles here is what you want to do…
Grab a head of fresh cauliflower and your jar of leftover pickle juice. We eat a lot of pickles daily so there is always a jar just about gone, perfect for this snack.
Chop your cauliflower up into small “bite sized” pieces, toss in a strainer and rinse very well.
Pop your cauliflower into the jar of pickle juice so that it is covered in juice.
Put it back in the fridge and leave it alone for at least a week, 2 is even better to get that yummy pickled flavor.
No more tossing out that empty pickle jar and wasting the deliciously flavored juice with a those seasonings, keep it on hand and whip up your own batch of Pickled Cauliflower. This jar will find it’s third life as it returns as a craft or container for craft supplies.
