This time of year I end up cooking a small turkey breast several times throughout the season not just on the holidays. Needless to say we have a lot of leftover turkey laying around. This is one of my favorite recipes to use up leftover turkey in a fresh new way. It is a simple, 1 bowl, 1 pan dish that everyone in the house loves. Give it a try this season and don’t forget Campbell’s Cream of Mushroom soup-it adds flavor, texture, and creaminess to every dish. I grab mine at Walmart while I am doing my other shopping and always keep a can or three in the pantry.
1 1/2s cup Campbells Cream of Mushroom soup
2 cups turkey, chopped small
1 cup wild rice, uncooked
1 cup boiling water
1/3 cup marsala wine or broth
1 tsp. black pepper
Preheat oven to 350°
Dice onion and turkey into small bite sized pieces.
Combine all ingredients in a large bowl until thoroughly mixed.
Spray 2 quart casserole dish generously with nonstick spray, or you can use individual casserole dishes.
Pour mixture into casserole pan, cover, and bake for 45 minutes.
Remove cover and bake an additional 10 minutes.
